INGREDIENTS:
- 2 oz Ritual Zero Proof Gin Alternative
- 1 ripe persimmon, peeled and pureed
- 1 oz lemon juice (freshly squeezed)
- ½ oz simple syrup (adjust to taste)
- 1 egg white OR 3 tablespoons aquafaba (for foam, optional but classic for a "fizz")
- Club soda (to top)
- Ice
- Fresh rosemary (for garnish)
INSTRUCTIONS:
- Prepare the persimmon puree - Peel and cut the ripe persimmon into chunks, then puree it in a blender or food processor until smooth.
- In a cocktail shaker, combine Ritual Zero Proof Gin, persimmon puree, lemon juice, simple syrup, and the egg white or aquafaba (if using).
- Dry shake (without ice). Shake vigorously for about 10-15 seconds to froth the egg white or aquafaba.
- Add ice to the shaker and shake again for another 10-15 seconds until chilled.
- Strain the mixture into a tall glass filled with ice.
- Gently top with club soda to add fizz, and give it a gentle stir.
- Garnish with a sprig of fresh rosemary for a fragrant, festive touch.
TIPS:
- If you want to skip the egg white, you can achieve a similar frothy texture by shaking vigorously or adding a small amount of aquafaba (chickpea water) as a vegan alternative.
- Adjust the sweetness by adding more or less simple syrup depending on the ripeness of the persimmon.
