INGREDIENTS:
COCKTAIL:
- 2 oz. fresh lemon juice (or 1 oz lemon juice + 2 oz Monday Gin)
- 1 oz. ginger syrup (see recipe below)
- 1 barspoon Apple Cider Vinegar
- .5 oz aquafaba
- 6 drops salt tincture (see recipe below)
- lemon wheel garnish
GINGER SYRUP:
- 2 tbsp. grated ginger root (with skin)
- 1 cup water
- 1 cup white sugar
- 1/4 tsp citric acid
Boil sugar and water until sugar granules dissolve. Remove from heat and add grated or finely chopped ginger. Allow to cool. Strain and add citric, slowly stirring until dissolved.
AQUAFABA:
Strain water from a can of chickpeas and remove chickpeas. Use the "chickpea water" in recipes that call for aquafaba. Think of this as a vegan egg white.
SALT TINCTURE:
- 1 part salt
- 4 parts water
Shake until salt crystals are dissolved and add to a dropper bottle.
INSTRUCTIONS:

Combine ingredients with ice into a cocktail shaker and shake vigorously. Remove ice and dry shake. Strain into a cocktail glass and garnish with a lemon wheel.
