This is our drink of the summer - perfectly tart, gently sweet, and deliciously refreshing. The recipe calls for a homemade cherry syrup that's easy to whip up. The Cherry Gin Rickey is great for batching and hosting near the grill or poolside.
*MAKES 4 SERVINGS*
INGREDIENTS:
SIMPLE SYRUP:
- 2 cups sugar
- 1 cup water
CHERRY SYRUP:
- 1/2 cup simple syrup
- 1 cup fresh cherries, pitted
COCKTAIL:
- 1 cup cherry syrup
- 1 cup Monday Gin
- 1/2 cup fresh lime juice
- ice
- soda water
- 4 lime wheels for garnish
INSTRUCTIONS:
- Make your simple syrup - mix the sugar and water in a small sauce pan over medium high heat, whisking the mixture consistently until the sugar is fully dissolved. Remove from heat and let the syrup cool.
- Make your cherry syrup - take 1 cup of fresh pitted cherries with 1/4 cup of your simple syrup and pour them into a blender. Blend on high until you get a smooth consistency. Strain the syrup through a cheesecloth lined strainer.
- Mix up the Cherry Gin Rickey - combine cherry syrup, 1 cup gin, and 1/2 cup lime juice. Stir thoroughly.
- Pour into 4 glasses filled with ice and top with soda water
- Garnish with a lime wheel and a fresh cherry
